I love these crispy, crunchy, spicy thai cucumbers with almost anything. We had an envie the other night for Pad Thai so of course, I thought what could be better as a side? Nothing compares to these spicy Thai cucumbers. The contrast of the spicy and sweet with the cool ginger infused cucumbers is so refreshing.
I recommend using English cucumbers or the small mini cucumbers. However, if you have an abundance of cucumbers in your garden this summer, this is a great way to prepare them for a hot summer night. These cukes pair well with grilled fish, meat and vegetables. Although they only take about 10 minutes to slice and assemble, they are best after marinating for at least 3-4 hours. In fact, I actually like them even better the next day. So all that these cucumbers ask of you, is that you think ahead and allow the cucumbers several hours to marinate before serving.
