Honeydew ginger peanut salad

I adore thirst quenching, ripe, juicy watermelon during the hot summer months. It is sublime when used in salads paired with cucumbers and mint and a few crumbles of salty feta. I was looking for something to change up this traditional summer favorite. Honeydew melons appeared at the market last week and inspired me to create a new take on the old favorite watermelon salad with a few different ingredients.

Honeydew ginger and peanut salad is just as cooling and refreshing as the watermelon salad. It has a bit of an Asian feel because it incorporates rice vinegar, a touch of fish sauce, freshly grated ginger and peanuts. The jalapeño contrasts with the sweet melon and salty fish sauce and gives the salad a nice kick without being too spicy. A little sweet from the melon and brown sugar, a little acid from the vinegar,  and some salt create a perfect balance to this refreshing honeydew, ginger and peanut salad. The creamy avocado and the crunchy cool cucumbers  add texture and contrast.

This salad does not require any cooking and you can make it and serve it in less than 20 minutes.

Make sure to give it time to chill in the fridge before serving. The honeydew salad is great on a hot summer night and as an accompaniment to grilled and bbq meats, vegetables, seafood or chicken.
