Are you looking for a quick and easy way to prepare shrimp tonight? Grilled garlic shrimp marinated in lemon juice and olive oil with fresh herbs may be just the solution. All you need are some large or jumbo fresh shrimp and 6 other ingredients to make an infusion to marinate the shrimp. From start to finish, this meal can be prepped, cooked, and on the table in about 30 minutes.

I recommend using large or jumbo shrimp. The shrimp should be fresh. Peel and devein them before marinating. It is not necessary to marinate the shrimp for more than 30 minutes or they will begin to break down. After the shrimp have marinated, thread them on wooden skewers that have been soaked in water. It is important to grill the shrimp on skewers rather than just place them on the grill. You could also use a grilling basket and turn the shrimp to make sure that they cook evenly.

I used fresh basil and parsley to infuse the olive oil marinade. You can also use dried herbs such as oregano, Italian seasoning, or rosemary.

The grill temperature should be at medium heat. The shrimp cook quickly which is a good thing! Grill the shrimp for 2-3 minutes per side. You will know when they are ready because they are transformed from their soft squishy forms to firm pink crustaceans.

I like to serve the grilled shrimp with risotto or on top of a favorite salad such as my kale salad with creamy caesar or with grilled romaine.

These grilled shrimp can also be complimented with a simple sauce. Try a garlic, lemon butter sauce or an herby pesto to top the shrimp. Maybe even a roasted red pepper puree would be good with the grilled shrimp.

So many choices and so much free time now that you only have to spend 30 minutes preparing this delicious meal!
