If you have followed my blog for a while, you know that I love frittata. I love them any time of the day. They make an elegant statement when served for breakfast and brunch.
Having friends over for lunch? You can create a savory frittata in less than an hour. Serve it with a cup of soup or a side salad. Are you looking for a simple, healthy yet hearty main for dinner? Try a frittata. This zucchini, tomato, and basil frittata has a bit of a Mediterranean vibe.
You can use zucchini or a combination of yellow squash and zucchini. It is best to grate the squash either in a food processor or a handheld grater.
Use the techniques that I have shared with you in other frittata recipes. Begin by sautéing vegetables. This is followed by adding spices and herbs and other veggies. Once the veggies are tender, it is time to add the lightly whisked eggs and milk mixture.
For this recipe, I use parmesan cheese to sprinkle on top. You can choose your favorite cheese to add or sprinkle on top. Feta is another tasty cheese that I love with eggs and vegetables.
