Salata Letchine is a date and orange salad from Morocco. I first saw this recipe in Paula Wolfert’s excellent book, “Mediterranean Cooking.” I typically like to serve this salad in the fall and winter months when local citrus is available in my area. Paula recommends serving this with spicy foods. I think it compliments spicy Mediterranean foods well because of the contrast of the slightly sweet salad with hints of cinnamon and the exotic taste of the orange flower water. I always serve salata letchine with a true Moroccan couscous which has a spicy harissa sauce, and with bouillabaisse and a sauce rouille. I recently served the salata with my vegetable paella and seafood paella and found that it complimented it perfectly.
If possible, do not omit the orange flower water. It brings such a distinctive aromatic flavor and smell to the salad. I purchased mine at a Middle Eastern grocery store but I am sure that you can order it online too.
