I am always looking for a new way to serve Brussel sprouts. This combination of roasting and then sautéing with almonds, lemon and garlic is a winner!
Roasted Brussel Sprouts with Almonds and Lemon

Ingredients
- 2 dozen Brussel sprouts, trimmed and halved
- 2 cloves of garlic, julienned
- 3 TBSP olive oil
- 1/2 cup of ground almonds
- 1 lemon
- salt and round pepper to taste
Instructions
- Heat oven to 375. Trim and halve the Brussel sprouts. Place on a foil lined sheet pan and toss with 2 TBSP olive oil and a little sea salt and ground pepper. Place the sheet pan in the oven and roast the sprouts for about 15-20 minutes or until tender and well browned. About half way through the roasting, add the garlic slices and toss well.
- Heat 1 TBSP of olive oil over medium heat to a large skillet. When the oil is hot, add the ground almonds, and stir until well browned.
- Add roasted Brussel sprouts, the zest of one lemon, juice of one lemon, and adjust salt and pepper to taste. Continue to stir until Brussel sprouts are well combined and coated with ground almonds. Serve immediately.
