My version of a caprese salad when the peaches are ripe and in season. This is another one in my collection of a recipe that really does not need a recipe. Just use these fresh ingredients in any combination that you wish and I promise, the results will be yummy.
Peach Caprese Salad

Ingredients
- 6 ripe peaches, peeled, pitted, stone removed, and sliced
- 3 oz of fresh mozzarella, cubed
- 12-15 fresh basil leaves
- 4 slices of prosciutto (optional) sliced or gently torn into thin strips
- 2 TBSP extra virgin olive oil
- Balsamic vinegar glaze
- a pinch of sea salt
- freshly ground black pepper to taste
Instructions
- Use a large platter or assemble the peach caprese on individual plates. Place the peeled and sliced peaches in concentric circles or in some decorative and eye appealing fashion on the platter or plates.
- Place basil leaves every so often in between the fresh peaches or gently tear them into pieces and scatter them across the peaches.
- Add the cubed mozzarella cheese to the peaches and basil. If you choose to add prosciutto, tuck small strips in between some of the peaches on each plate or on the platter.
- Drizzle the platter of peaches or each plate with olive oil. Then drizzle balsamic vinegar, in a diagonal motion, up and down across the peach caprese. Beautiful isn't it? Makes you feel like an artist! Can add a pinch of sea salt and a few grinds of black pepper if you wish.
