Is it cocktail hour yet? How about a throwback this week to something retro that your mamma and your grandmother used to make, but something that would compliment your cocktail hour. After a quick review of  family recipes, I immediately ruled out the shrimp mold, jello salad, coca cola cake and tuna casserole. Only the best retro recipe for you: Olive Surprises appetizer.

What are olive surprises? Think of a cheese straw type of dough (strictly southern!) wrapped around a pimento stuffed green olive and baked. Serve warm with your beverage of choice.

Ingredients

  • 1/4 cup salted butter, softened, at room temperature
  • 1 cup sharp cheddar cheese, grated (white or orange cheddar, optional)
  • 1/2 c flour
  • pinch of cayenne pepper to taste
  • 1/2 tsp creole seasoning
  • 24 -30 medium pimento stuffed olives

Instructions

  1. Cream butter and cheese in a bowl with a hand held mixer or in a food processor. Roll the dough into a smooth ball and wrap with plastic wrap. Chill the dough for about 15 minutes or so.
  2. Pat the chilled dough out and break off a small piece, about a tablespoon. Shape the dough around each olive, rounding and smoothing the dough. Make sure that the olive is well covered. If dough is too dry, add a little more butter.
  3. Place the dough covered olives on a sheet pan. Bake at 400 degrees for 15 minutes until lightly browned.
