Marinated chèvre or goat cheese, is another one of my easy no cook recipes for a quick and simple appetizer. Use whatever fresh seasonal herbs are in your garden or available at your local farmers market. Add some dried peppercorns, bay leaves, a little lemon zest, lemon juice and extra virgin olive oil and allow these flavors to infuse with the chèvre for about an hour. Serve with slices of a hot crusty baguette or toasts. Perfect for happy hour with aperitifs. Sante!
Marinated Chèvre

Ingredients
- 1 6-8 oz roll of plain chèvre (goat cheese)
- 1/2 cup or more of olive oil to cover the chèvre
- 2 bay leaves
- zest of one lemon
- 1/2 tsp pink peppercorns
- 1/2 tsp of black peppercorns
- 2 sprigs of fresh rosemary or 1 TBSP fresh rosemary roughly chopped
- 1 tsp fresh thyme
- 2 cloves of garlic, sliced into thin pieces
Instructions
- Cut the cold chèvre into 1/2 " rounds. Do not worry if it falls apart, it still tastes great. Combine the olive oil, fresh herbs, lemon zest, garlic slices and peppercorns in a bowl. Add the chèvre rounds to bowl, making sure that it is covered with olive oil herb mixture and gently toss with the mixture, drizzling the olive oil over the cheese rounds so that it can marinate.
- Serve at room temperature with french bread slices or toasts or crispy crackers. I like to use the leftovers to season a salad or in an omelette.
