Greek Salad Sandwich

Ingredients
- 3 ripe tomatoes or 1 cup of cherry tomatoes
- 2 small cucumbers, partially peeled and cubed
- 12 black Kalamata olives, pitted and cut in half
- 1 tsp fresh oregano, chopped
- 3 TBSP crumbled feta
- sea salt and fresh ground black pepper to taste
- 1 TBSP red wine vinegar
- 1/3 C Greek olive oil or any extra virgin olive oil
- 2 whole wheat pitas, halved and lightly toasted
Instructions
- In a large salad bowl, combine diced tomatoes, or cherry tomatoes, halved, cubed cucumbers, olives and oregano. Sprinkle with sea salt and pepper to taste. Toss gently with vinegar and olive oil. Add more if needed. Add crumbled feta and toss lightly to combine.
- Split pitas and toast lightly in a toaster.
- Open the pitas. You can put a light layer of mayonnaise if you wish and then fill the pita with the greek salad mixture. Taste summer, it's here!
