I guess if you add garlic, lemon, olive oil, and oregano to anything you could fairly state that it has been cooked in the Greek style. I serve these lemony potatoes with my whole grilled fish but they are also a wonderful accompaniment to chicken, such as my grilled chicken kebabs, or lamb.
Greek Roasted Potatoes

Ingredients
- 3 pounds small red new potatoes, cut into 1 " cubes
- 1/2 cup olive oil
- 4 cloves of garlic, minced
- 1 1/2 tsp dried oregano or 2 tsp chopped fresh oregano
- 1 tsp salt
- fresh ground black pepper
- 1/2 cup chicken stock
- 1/3 cup freshly squeezed lemon juice
Instructions
- Preheat oven to 400 degrees.
- I do not peel the small red new potatoes. Leave the skin on and cut them into cubes. Place them in a large baking dish and toss with olive oil.
- Add the garlic, 1/2 of the oregano, salt and pepper to taste. Combine well with potatoes and olive oil.
- Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 more minutes. Then add the lemon juice, mix well and bake for about 15 more minutes until the potatoes are cooked through.
- Sprinkle with remaining oregano and serve immediately.
