My friend Roma called the other day and told me that the figs on her tree were ripe. Then she even picked and delivered a bag of freshly picked figs to my doorstep just in time for dinner. This is what I created to show off these juicy ripe figs.
Fig, Roasted Pecan, and Blue Cheese Salad

Ingredients
- 5 cups of hearts of romaine lettuce, chopped
- 1/2 cup roasted pecans, chopped
- 12 fresh figs, halved
- 4 oz blue cheese. crumbled
- Honey lemon dressing:
- 1/4 cup lemon juice
- 1 tsp honey
- 1/2 cup olive oil
- salt and freshly ground black pepper
Instructions
- Chop the hearts of romaine and place in a large bowl. Add sliced figs and crumbled blue cheese.
- Make honey lemon dressing. Pour lemon juice into a small bowl and whisk together with honey. Slowly add olive oil in a steady stream. Continue whisking until well combined. Add salt and pepper to taste.
- Add roasted pecans to lettuce mixture. Toss with honey lemon dressing and divide and serve on individual plates.
