Yes, it’s another cauliflower recipe, cauliflower pancakes. I seem to have lost count of the number of cauliflower recipes that I have shared with you over the years. I like to look across the globe for cauliflower recipes from countries such as India, Morocco and of course the best cauliflower recipes from our own backyards.

Aloo gobi, is an Indian dish with spiced potatoes and cauliflower that you can find on my blog. It  is a stir-fried aromatic vegetarian dish that is popular in India and Pakistan. In Hindi, “aloo” translates to potatoes and “gobi” to cauliflower.  Aloo gobi can be served with rice as a main or as a vegetable side. The cauliflower and potatoes are stir-fried and a little water is added to help cook or steam the vegetables until tender. Check my website for this recipe and the ones to follow.

My brown butter roasted cauliflower with capers and spinach is a quick and easy solution to a veggie side that pairs well with just about anything you may choose to serve for dinner.

Cauliflower zaalouk, or zaalouk de chou fleur is a Moroccan cauliflower recipe that can be used as a vegetarian main dish or a side. What I like best is to serve my modified version of zaalouk on top of hummus as an appetizer. The creamy hummus combined with the sharp taste of the turmeric and lemon, salty olives, and the sweetness of the cauliflower create an exotic taste explosion of spices.

These cauliflower pancakes are best served as a vegetable side. The boiled and mashed cauliflower is mixed with cheese, green onions, spices and bread crumbs to bind the mixture.

After you shape the pancakes into 3 inch rounds, fry them briefly in a hot skillet in olive oil. Let them get brown and crisp on the outside before you flip them.

I like to serve my veggie pancakes on a bed of salad greens with a squeeze of lemon and a dollop of sour cream.
