Marinated Chèvre

Marinated chèvre or goat cheese, is another one of my easy no cook recipes for a quick and simple appetizer. Use whatever fresh seasonal herbs are in your garden or available at your local farmers market. Add some dried peppercorns, bay leaves, a little lemon zest, lemon juice and extra virgin olive oil and allow these flavors to infuse with the chèvre for about an hour. Serve with slices of a hot crusty baguette or toasts. Perfect for happy hour with aperitifs. Sante!
