Don’t mess with southern tradition. We start the new year right with black eyed peas, smothered cabbage, and spicy cornbread every year. A healthy dose of these one pot comfort foods will bring you a year of good luck, wealth and prosperity. I guarantee!
Black eyed peas

Ingredients
- 2 TBSP cooking oil or fat rendered from 4 strips of chopped bacon
- 1 medium onion, chopped
- 2 stalks of celery, chopped
- 2 cloves of garlic minced
- 1 jalapeño, seeded and minced
- 6 green onions, chopped
- 1 tsp thyme
- 1 lb. dried black eyed peas
- 1/4 tsp cayenne
- Salt and ground black pepper
Instructions
- Place the dried black eyed peas in a bowl and cover with water. Soak overnight.
- Pour off the water before cooking.
- Heat the oil, or render fat from 4 strips of chopped bacon, in a heavy pot, like a dutch oven. If you use the bacon, remove from the pot when browned.
- Add the chopped onion, celery, garlic, jalapeño, and half of the chopped green onions to the hot oil.
- Sauté vegetables over medium heat until wilted.
- Add black eyed peas to the pot and cover with at least 2 inches of water. Add 1 tsp of thyme. Add reserved cooked bacon at this time if you wish.
- Cook at a slow, yet steady simmer until the peas are tender, about 30-45 minutes.
- Season with salt and ground black pepper to taste.
- Add 1/8 to 1/4 tsp of cayenne pepper depending on your tolerance for spicy.
- Serve as is in a bowl with all of the savory juices or over your favorite rice. Garnish with remaining chopped green onions. Don't forget the hot sauce !
