Although we learned to make this soup in San Miguel D’Allende, this simple “sopa” originated in the Mexican state of Michoacan. Soups and “salsas” or sauces are thickened and flavored with a variety of chiles, nuts and seeds. Wheat and flour are not part of the authentic Mexican cooking experience.
