Pimento cheese, sometimes known as the “pate of the south,” is frequently served at weddings, any occasion parties, and even funerals. It is especially appropriate for gift giving during the holidays. Cochon Butcher, a charcuterie and restaurant in New Orleans, is mostly known for their house cured meats and sausages. They also make some of the best pimento cheese I have ever tasted. This is supposedly the recipe for pimento cheese from Cochon Butcher. I double the recipe, put it into cute glass crocks, tie it with a bow, and voila, “happy holidays!” Don’t forget to save some for yourself!
