This is my go to recipe for grilled salmon. I love the juxtaposition of the spicy paprika, chili, and bold cumin with the gentle sweetness of the maple syrup. My brother, Kim, shared this treasured recipe with us years ago. We have prepared it on many occasions for family and friends and now we want to share it with you.

Ingredients
- 4 -6oz salmon filets
- 2 tsp paprika, use a good smoky Spanish paprika
- 2 tsp chili powder
- 1/2 tsp cumin
- ½ tsp brown sugar
- 1 tsp sea salt
- 2-4 tsp of real maple syrup
Instructions
- Heat grill to medium. Combine first five ingredients. Some paprika is mild and some are more spicy. Choose the paprika that you prefer but make sure it is a good, usually Spanish paprika is the best, smoky one. Sometimes I blend 1 tsp of spicy paprika with 1 tsp of mild. Sprinkle fish with salt then rub with paprika mixture.
- Place fish on grill, oiled with cooking spray, skin side down. Grill about 7 minutes,
- Drizzle salmon with syrup. The original recipe called for 1 tsp of syrup. I like to use 2-4 tsp for 4 salmon filets.
- Grill for another minute or 2 or until the fish flakes easily when tested with a fork. Cooking times may vary depending on the thickness of the salmon filets and whether or not you like your salmon rare or medium or well done. Should be crusty, juicy, sweet and a little spicy.
