According to Gayden Metcalfe and Charlotte Hays in their definitive guide to southern rituals, “Being Dead is No Excuse, The Official Southern Ladies Guide to Hosting the Perfect Funeral,” a “polite civil war” rages over whether sweet or savory is preferable in stuffed eggs.
I recently asked friends and family to share their stuffed egg secrets and identified as many varieties of fillings as I have friends and cousins. Some recipes are as simple as just celery, eggs, and mayo or just a little chopped onion, eggs, and mayo.
My friend Karen, an official Southern lady, hails from Laurel, Mississippi. Although she would not describe herself as a cook, she is beautiful and brilliant and can make a mean stuffed egg using whatever may be available in the pantry.
Then there is the dilemma of sweet or dill pickle relish. Do you dare to add a touch of pickle juice? Why do some people call them stuffed eggs and some refer to them as deviled eggs? In any case, stuffed eggs are a staple in the south for just about any occasion. And, I may be the only woman living in the south that does NOT own even one special platter for stuffed eggs!
