Happy St Patrick’s Day! Forget the green beer and cabbage and potatoes. How about a cup of tea with a crisp buttery piece of Irish shortbread? Irish shortbread is simple and just like any other shortbread. The only difference is that I use a rich, flavorful Irish butter form Irish cows that graze on Irish grass. The history of shortbread dates back to Mary Queen of Scots in the mid 1500’s. Queen Victoria and Prince Albert also loved to serve shortbread for a tea time treat.
