I discovered this recipe from Emeril Lagasse years ago and adapted it for chicken. The original recipe called for lamb, however, I was looking for something less expensive and a little lighter to serve during the summer. I love these kebabs and the sauce to be lemony and minty. Thus the Greek style chicken kebabs with feta sauce were born. I recently made these and served them with tzatziki, a cold cucumber, yogurt and mint sauce, rather than the feta. Perfect combination.

Ingredients
- 11/2 C finely chopped onion
- 1 TBSP grated lemon zest
- ¼ cup lemon juice
- ¼ cup chopped parsley
- ¼ cup chopped cilantro
- 3 TBSP chopped fresh mint
- 2 tsp salt
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp pepper
- ¼ cup olive oil
- 2-2/12 lbs chicken breast, cut into bite sized cubes
- 8 pita breads (optional)
- Feta cheese sauce:
- 4 oz feta crumbled
- 4 oz cream cheese at room temp
- ½ cup Greek style yogurt
- 2 TBSP minced green onion
- 1 TBSP minced mint, (I usually double this amount)
- 2 tsp. lemon juice
- 1 tsp minced garlic
- 1 tsp olive oil
- 1 tsp lemon zest
Instructions
- In a larger bowl combine all of ingredients above, stir well, and add chicken pieces. Make sure that chicken is covered with the marinade. Cover and refrigerate 2-4 hours. This is essential to maximize all of these wonderful flavors.
- Soak 8-10 bamboo skewers in warm water. Preheat grill to high and lightly oil the grate. Can also broil in oven at 450-500. Thread meat onto skewers, leaving a little space between each piece to make sure that the chicken cooks evenly. Place the kebabs on grill or in broiler turning frequently for 12-15 minutes until lightly browned and cooked through.
- Feta cheese sauce: While the chicken is marinating, make the feta sauce. Combine all of the ingredients for the sauce in a bowl and blend well. May help to use an electric mixer to get a smooth sauce. Cover and refrigerate for at least an hour or overnight.
- When meat has finished grilling, wrap in warm pita (optional), remove skewer and drizzle with feta spread or tzatziki. You can find my recipe for this cool cucumber, mint and yogurt sauce on the blog.
