Give me ANYTHING almond. Love these little 2 bite moist and tender almond cakes. Traditionally, they were baked in small rectangular pans shaped to resemble bars of gold.Thus the name “financiers.” These classic french cakes are made with ground almonds and browned butter. Dreamy!! I bake them in mini muffin molds and the results are excellent with a crusty crunchy exterior and moist interior. Great with coffee or tea for breakfast or as an afternoon snack. Ingredients
- 1 cup almond flour
- 3/4 cup plus 2 tablespoons sugar
- 5 tablespoons flour
- pinch of salt
- 4 large egg whites, at room temperature
- 1/2 teaspoon vanilla or almond extract
- 2 1/2 ounces brown butter, slightly warm (liquified)
Instructions
- Preheat the oven to 375ºF and butter the insides of 24 mini muffin tins generously with softened butter. Melt the 21/2 oz of butter in a small skillet and cook slowly over low to medium heat until browned. Set aside.
- In a medium bowl, mix the almond flour, sugar, regular flour and salt. Stir in the egg whites and vanilla or almond extract, then the browned butter.
- Fill each of the mini muffin tins almost to the top. Rap the tins sharply on the counter to level the tops.
- Bake for 13 minutes, until nicely browned. Let the financiers cool in the tins, then remove the cakes using a sharp knife to help release them.
