As the temperatures rise, I am always looking for solutions to beat the heat. Last year when I was visiting my brother in Phoenix, I had a cool herbal cucumber cilantro margarita. Maybe because I was in the desert, outdoors, with no bugs, watching the sunset, the margarita tasted sublime and incredibly refreshing. Here is my version which tastes pretty good even though I am on my back porch in Louisiana. And yes, there are insects! I use reposado tequila because it is slightly aged and has a smooth, mellow flavor and finish. Any tequila will work with these ingredients and produce refreshing results.
Cucumber Cilantro Margarita

Ingredients
- 4 oz of reposado tequila
- 2 oz cointreau or triple sec
- Juice of 2 fresh limes, at least 4 oz of juice
- 2-3 TBSP cucumber cilantro simple syrup
- 2 fresh cucumber, sliced
- 8 oz sugar
- 2 cups water
- 12 sprigs of cilantro
- 1 jalapeño, seeded and sliced, optional
Instructions
- First make the cucumber cilantro simple syrup: 1 cucumber, halved and seeds removed. Slice into chunks about 1/4" thick. Combine sugar and water in a small pot and bring to a boil. Stir occasionally. Bring the syrup to a boil, stir to make sure sugar is dissolved. Remove from heat and cool. Add the chopped cucumbers and cilantro and let steep for 4-5 hours or preferably overnight. Strain and refrigerate. Add cucumbers and cilantro and steep for 4-5 hours or overnight preferably. At this point you can also add the jalapeño if you want to give the syrup a little kick. After steeping, strain into a jar and keep the syrup refrigerated. The syrup will last for several months.
- Slice the second cucumber into 1/4" rounds. Place about 8 slices into a cocktail shaker and muddle. Add tequila, fresh lime juice and cilantro cucumber syrup. Add ice and shake to chill the drink.
- Strain and pour the margarita into a frozen margarita or martini glass. Serve straight up. Garnish with a cucumber slice and a sprig of cilantro if you wish. I do not usually rim the glass with salt but if you prefer your margarita to be salty please do!
