Redfish or red drum inhabit the Gulf of Mexico waters from Texas to Florida and are a favorite for grilling. If you can get your hands on some fresh redfish, red snapper or sea bass, have your fish market filet the fish and leave the skin and scales on for grilling. From start to finish, this quick and easy recipe should not take more than 30 minutes.

Ingredients
- 4, 10-12 oz redfish filets, with skin and scales
- 1/4 c olive oil
- 3 garlic cloves, minced
- juice of one lemon
- 1/2 tsp red pepper flakes or cajun seasoning
- salt and pepper to taste
- 1/2 cup parsley, chopped
Instructions
- Heat grill to medium high. Rub both sides of fish filets with olive oil, lemon juice minced garlic and spices.
- Place oiled filets on the grill skin side down. Allow to cook for 10-15 minutes depending on thickness of filets. DO NOT TURN THE FISH. Fish is done when the meat flakes easily with a fork.
- Sprinkle cooked filets with chopped parsley and lemon slices. Serve immediately.
