My friend Helen says she doesn’t cook. For Christmas this year she delivered a beautiful container of toasted granola to our doorstep. She was not aware that my favorite breakfast almost everyday is greek yogurt with fresh fruit and granola. Perfect for a quick boost between early morning walking and yoga. Helen is obviously hiding something from me or does not recognize her skill in the kitchen even if it is just mixing and roasting homemade granola. Her selection and combination of oats, dried fruit and nuts, and aromatic spices was on point. Merry Christmas, merry anytime, to cook and indulge in this simple healthy granola!
Helen’s Fruity Homemade Granola

Ingredients
- 3 cups old fashioned rolled oats
- 3 TBSP packed dark brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp fine sea salt
- 1/3 cup honey
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup dried fruit of your choice
- 1/2 cup coarsely chopped raw or toasted nuts and seeds
- 1/2 cup toasted unsweetened coconut
Instructions
- Heat the oven to 300F. Place the oats, brown sugar, cinnamon and salt ( if you have a flavored salt, such as vanilla sea salt, try that) in a large bowl and stir well to combine. In a smaller bowl, combine the honey, oil, and vanilla. Pour over the oat mixture and stir well to combine.
- Spread the mixture in a thin layer on a large baking sheet. Bake for 15 minutes then stir and continue baking for about 10-15 more minutes until the granola is a light golden brown.
- Let the granola mixture cool to room temperature. Stir occasionally.
- Add the dried fruit, such as diced apricots, mangos, apples, pineapple, raisins or fruit of your choice. Toss to combine. I also like to add toasted unsweetened grated coconut.
- Next add the roasted nuts. I prefer pecans, almonds and walnuts. You can also add toasted pumpkin seeds, chia seeds or sesame seeds. The flavor of all of the nuts will improve greatly through roasting. Roast and cool before adding to granola mixture.
- Once the granola, dried fruit, and nuts is well combined, you may store the granola in airtight containers for up to 2 weeks.
