Use fresh preferably organic eggs. Place the eggs in a small pot and cover with 1″ of cold water. Place the pot over medium to high heat and bring to a boil. Once the pot comes to a boil, cover and remove from heat. Allow the eggs to rest for 11/2 – 2 minutes. Large eggs may need to soak for longer. Remove from the pot and place in an egg holder. Slice the top from the egg. Use a small spoon to eat directly from the shell or scoop the warm white and yolk into a small ramekin. Also good with wedges of buttered toast for dipping.
