Mirepoix

Mirepoix

Mirepoix is one of the foundations of French cuisine. Like the “Holy Trinity” it is 2 parts onion to 1 part carrot and 1 part celery. The Holy Trinity in Cajun and Creole cuisine substitutes green pepper for the carrot. The finely chopped vegetables are sautéed in butter and are used as a foundation for many soups, sauces, braised meats and other dishes.
