Roasting

A broad term that can be applied to the specific preparation of meats, fish and vegetables. Roasting preserves the internal juices of the food being prepared. Usually refers to roasting in the oven or can be on an open fire on a grill or your gas stovetop. I roast or char vegetables, like eggplant, over the open gas flames on my stove to create the smoky flavor I need for baba ganoush.
