Braising uses moist and dry heat. Meats and vegetables can be easily braised in 2 easy steps. The first step is to sear or lightly fry the ingredients and then add either water or a flavorful broth, or wine and herbs to the pan. The temperature is then lowered, cover the pan, and continue to cook gently until done. This low and slow cooking can transform tough cuts of meat into succulent fall off the bone delights. One of my favorite braised meat dishes is Osso buco!
